The chef Antonello Colonna, whose restaurant in Labico di Roma enjoys a Michelin star and three Gambero Rosso forks, has in fact certified the quality of his dish, none other than the Roman Panzanella, through the use of blockchain technology.

Roman Panzanella: Sometimes technology can help traditional cuisine and ensure its quality.

Through this immutable and incorruptible registration system (obviously in a technical, not moral sense), the customer can know, by reading an attached QR code, the origin and verify the quality of the raw materials of the product, starting from tomato, wholemeal bread, oil and basil, so as to offer complete certainty to the consumer of this summer dish.

The initiative is the result of a collaboration between the cook, the Roman startup pOsti and Foodchain, an Italian company specialized in food traceability.

Foodchain has developed its own proprietary traceability technology, using QR codes linked to the blockchain, in order to provide consumers with the greatest possible quantity and quality of information on the ingredients consumed.

The initiative has its interest in the fact that, usually, when we talk about traceability via blockchain, we are talking about large complex projects, created at state level, such as the one implemented in the United Kingdom by the FSA on an experimental basis, or multinationals such as Carrefour or Wal-Mart or even Alibaba, which use this technology to optimise their logistical networks and eliminate food fraud.

On the other hand, the blockchain Panzanella experiment shows that this technology is also available at the retail level and that it has the potential to solve many of the problems related to certification of origin of raw materials and possible food allergies.

A next step, easy to implement, could be a blockchain reader that warns people with serious allergies to keep away from foods that may have been in contact with allergens. A simple and widespread blockchain application, within everyone’s reach.

At this point, only the recipe of Panzanella is missing, with or without blockchain

Here is the original recipe:

  • 4 slices of homemade bread, preferably wholemeal;
  • extra virgin olive oil;
  • 4 ripe tomatoes;
  • a few leaves of basil;
  • a drop of white vinegar;
  • salt and pepper
  • a spring onion

Leave the bread to stale with water for a few days to soften it. Finely chop the onion, let it dilute in cold water, then cut the tomatoes and season with onion, torn basil by hand, oil, vinegar, salt and pepper. Squeeze the bread and mix with the tomato. Enjoy your meal.
